Cobbler
Best served with a bit of whipped cream or ice cream on top.
I have tried most every cobbler recipe I could find, and this is the best of all. A bit of whipped cream or ice cream on top should be part of every cobbler. Serves 6.
Ingredients
4–6 cups fresh berries or fruit, washed and well dried
3/4 cup sugar
8 tablespoons (1 stick) butter cut into bits, plus some for greasing the pan
1/2 cup flour
1/2 teaspoon baking powder
pinch of salt
1 egg
1/2 teaspoon vanilla extract
Instructions
Preheat oven to 375 degrees. Toss fruit with 1/4 cup sugar and spread it in a lightly buttered 8-inch square baking dish.
Combine the flour, baking powder, salt, and 1/2 cup sugar in the container of a food processor and pulse once or twice. Add the butter and process for 10 seconds, until the mixture is well blended. Transfer the mixture to a bowl and beat in the egg and vanilla by hand. This will make a thick mixture.
Drop this in small tablespoon-size bits onto the fruit. Don’t try to spread it out evenly. Bake until golden yellow and just starting to brown, 35–40 minutes.
