Couscous with Olives & Garbanzo Beans
Perfect pairing with short ribs or any other meaty dish,
Even if you’re not crazy about couscous, you’ll probably love this. It’s tangy and flavorful. And perfect with a meaty main course, Serves 4.
Ingredients
14 oz. chicken broth
1 10-ounce can garbanzo beans, drained
1 cup chopped red onion
1/2 cup chopped pitted Kalamata olives
1/2 cup chopped fresh Italian parsley
5 tablespoons fresh lemon juice
1 teaspoon grated orange peel
Instructions
Bring broth to a boil in medium saucepan over medium high heat.
Stir in couscous, cook 30 seconds.
Remove from heat, cover and let stand for 5 minutes. Fluff with a fork.
Mix in garbanzo beans and remaining 5 ingredients. Season with salt and pepper.
