Fish and Salad Tacos
Fresh, healthy combination of salad, fish and Mexican spice.
I created this recipe from things that just happened to be in my kitchen. It worked! This is a fresh healthy combination of salad, fish, and some Mexican spice. Serves 4.
Fish Ingredients
3 cloves garlic, sliced
1/2 red onion, chopped
3 tablespoons butter
1 chopped jalapeño
1 yellow squash, sliced thin
2 tablespoons canned hot hatch chilies
1 1/4 pound of boneless white fish (grouper, drum, or snapper) cut into 1 by 2-inch pieces
1/4 cup cilantro, roughly chopped, including stems
juice of one lime
dash of white wine vinegar
salt and pepper
2 fresh jalapeños, chopped, for garnish
Sauté the garlic, onion, and jalapeño in butter. Add the chilies and the squash. Sauté for one minute and add the fish with the lime juice and cilantro. Add the vinegar, salt and pepper to taste. Cook until fish is just done.
Salad Accompaniment
Toss together:
1/2 cucumber, peeled seeded and diced
1 tomato, chopped
1/2 cup French feta cheese, crumbled
1 cup cilantro, roughly chopped
1/4 cup mint, roughly chopped
1/4 cup basil, leaves torn
juice of one lime
1 avocado, chopped into squares
salt and pepper
Serve with fresh hot corn tortillas and a small bowl of chopped jalapeños. Let everyone create their own tacos.
