Hummus with Shallots
A comforting kid‑friendly dip, elegant enough for a cocktail party.
Hummus is nutritious and comforting. It’s a hit with kids and holds its own at a cocktail party. Experiment with additions to the hummus such as: roasted peppers, anchovies, basil, mint, or parsley. These can be chopped and added to the top or incorporated into the dip.
Ingredients
1 (15‑ounce) can garbanzo beans
1/3 cup tahini
1 large clove garlic
juice of 2 lemons
3 tablespoons minced shallots
1 teaspoon white wine vinegar
Salt and pepper
1/3 cup olive oil
several dashes of Tabasco
1 tablespoon Spanish smoked paprika
4 tablespoons of roasted pistachios, chopped chives or lemon zest for topping (optional)
Instructions
Blend all ingredients in a food processor until smooth. Add olive oil gradually until the hummus becomes very creamy.
Garnish with toasted pistachios, chopped chives, paprika, or lemon zest.
Serve with toasted pita wedges, vegetable sticks, or endive leaves.
