Lemony Lentil Spinach Soup
My latest favorite thing: A delicious rush of iron and protein that gives me an energy burst.
When a friend told me that her doctor said she had tested low on iron and this was the explanation for her low energy, I realized that I’d never thought much about iron. Then I researched it a bit, and created this recipe that is FULL of iron AND protein. I was surprised that it really does make me feel great. And bonus, it can sit in the fridge for days. I’ve pulled it out for a last minute meal in a bowl and delivered it to friends who feel under the weather.
This healthy hearty soup is a light lemony meal in a bowl. Top it with greek yogurt and an extra slice of lemon to squeeze on top. (Apparently, our bodies cannot assimilate iron unless it is accompanied by something like lemon. Who knew?)
The texture is enhanced by partially blending this soup. Stick an immersion blender straight in the pot and blend until the texture is slightly creamy but still has lots of toothy texture. Or, if you don’t have an immersion blender, put half of the soup in a countertop blender. But don’t overdo it. You do not want a smooth puree.
