Prosciutto-Wrapped Snap Peas
Adapted from the well-known asparagus-based cocktail treat.
This is an appetizer that is not heavy and rich. It has a nice fresh crunch, but is also satisfyingly substantial.
Ingredients
50 fresh snap pea pods
½ cup cream cheese
½ cup goat cheese
1 clove garlic, finely chopped
1 tbsp finely chopped shallots
½ tbsp finely chopped Italian parsley
½ tbsp finely chopped fresh thyme
1 tbsp lemon juice
½ tsp grated lemon zest
1 tsp white truffle oil
Salt and pepper to taste
25 thin slices of prosciutto
Directions
Rinse and dry the fresh pea pods. Remove the thick string from the sides of the more mature pea pods as well as the stem tops. Mix all other ingredients (except the prosciutto) together. Cut a strip of prosciutto for each pea pod that is shorter than the pod and will wrap around the pea pod at least twice.
Lay each pea pod on its prosciutto strip, place a small spoonful of the cheese mixture on top of the pea pod, and then wrap the prosciutto around the pea pod and cheese mixture. The cheese mixture should be well contained within a tidy prosciutto covering.
Chill the pea pods, then place them in an attractive pattern on a serving platter.
